This simple avocado orange salad is delicious and can accompany almost any type of entrée. It is substantially different from traditional lettuce salads. When combined with a meal such as chicken and a side of potatoes or rice, avocado orange salad is a filling compliment.

Salad Ingredient Selection

I like to make sure that my avocados are ripe. That means that they are soft to touch, but not mushy. Avocados ripen well and rapidly on their own, so if you are planning on making this salad in a day or two, look for ones that are firm and showing slight signs of softening. If you purchase your avocados in quantity, you may find that most of them ripen at the same pace. This salad offers a solution to using up those delicious avocados in one meal. In North America, avocados can be expensive, so enjoy using them in a satisfying salad and get your money's worth.

For oranges, I prefer to use seedless. Otherwise, it takes time to remove each seed, and if you don't happen to get them all, it's like finding a little pebble in your smooth and creamy textured salad.

I use the lime juice because it is useful for preserving the color of the avocados in case there are leftovers. It also adds a nice tangy flavor.

Avocado Orange Salad

Serves 4

Ingredients:

  • 2 medium-sized avocados
  • Juice of 1 lime
  • 4 oranges, preferably seedless
  • 1/4 to 1/3 cup of extra-virgin olive oil
  • 3 to 4 tablespoons white vinegar
  • Salt, for seasoning
  • Pepper, for seasoning (optional)

Directions:

  1. Cut avocados open. Remove the pits by hitting them with a sharp chef's knife, then twisting them loose. Spoon out the flesh, dice and place the flesh in a large mixing bowl.
  2. Squeeze lime juice over the top of the avocados and stir gently to coat the avocados with the lime juice.
  3. Cut each orange into 6 slices. Then cut the slices of orange into smaller pieces and remove from the peel carefully with a knife. Add oranges to the bowl.
  4. Sprinkle olive oil and vinegar over the avocados and oranges. Season to taste with salt and pepper (optional).
  5. Cover and refrigerate if not eating promptly.

Variations

A number of variations can be used with this salad. For instance, if I have them on hand, I will add dried cranberries or some chopped nuts for a variety of flavors. Oranges can be substituted with mandarins. You might even come up with your own tasty variations.
